Baby Green Salad with Dates, Walnuts and Wasa

Ingredients

1 package (4 ounces) mixed baby salad greens
1 cup fresh dates, chopped
1 tablespoon oats
1 cup toasted walnuts, coarsely chopped
3 tablespoons canola oil
1 tablespoon red wine vinegar
Salt to taste
Freshly ground black pepper to taste
6 pieces Wasa Multi Grain Crispbread

Directions

Coat dates by rolling in oats to prevent sticking together. Set aside.
Place mixed greens in a salad bowl. Add walnuts, dates, canola oil, red wine vinegar, salt and pepper.
Toss greens and serve as salad with crumbled Wasa Crispbread pieces or spoon onto individual whole crispbreads.

Prep time: 15 minutes

Chilling Out with Forward Bends

I glanced at a weather map of the United States today and it’s orange, darker orange, and red all over. In other words, it’s hot.

I tend to have a high tolerance for 90 degree weather, so I revel in it, but my yoga teacher says the heat makes a lot of people irritable.

She thought we should focus on cooling poses in class today.

We worked on variations of Downward Facing Dog – using a chair, then a wall, then the regular way – and then spent some time in Child’s Pose, Uttanasana (Standing Forward Bend), and Paschimottanasana (Seated Forward Bend*).

“Forward bend poses are great for settling you down when you’re feeling agitated,” the teacher said. “You may sweat while you’re in the pose, but they’re calming on the nervous system.”

I must say, it is amazing how as the class continued I felt myself grow into silence as I streeeeeetched out, my heart resting peacefully inside.

So if you find yourself snapping at people (including yourself) or not tolerating the traffic or noticing that things that you usually don’t mind are bugging you, take heart. It might simply be the heat. Try breathing a few times . . . and don’t forget to bend.

*In Seated Forward Bend, I have to sit on two blankets and lasso a strap around the balls of my feet to hang onto and pull myself forward because I can’t reach my arms to my toes. The teacher looks just like the lady in this picture when she’s in the pose, but she mentioned that 18 years ago she had to use blankets and straps too. So. By my calculations I should be able to do Seated Forward Bend without props in 15 years. I wasn’t discouraged by this. I was excited. The human body is amazing. Anyway, I’m pretty sure you’re not supposed to think about those things in yoga class, but sometimes I can’t help it!   

Wasa with Cottage Cheese, Strawberries and Blood Orange

Ingredients

4 ounces low fat cottage cheese
1 cup (6 ounces) fresh strawberries, chopped
½ teaspoon blood orange zest
1 teaspoon juice from a blood orange
2 teaspoons honey
4 pieces WASA Sourdough Rye Crispbread (May substitute WASA Multigrain, Hearty Rye, Sourdough Rye, or Oats Crispbread)

Directions

Mix together strawberries, ¼ teaspoon zest, blood orange juice, and honey in a small bowl.
Spread cottage cheese on cracker, top with mixture, and sprinkle with remaining zest.

TIP: May substitute any berries, peaches, apricots, or pineapple for strawberries. You can also substitute a regular orange for a blood orange.
Refrigerate leftovers for 3-4 days.

Wasa with Warm Feta, Tomatoes, and Herbs

Ingredients

1 cup cherry or grape tomatoes, sliced
Salt to taste
Freshly ground pepper to taste
1 teaspoon olive oil
½ teaspoon chopped oregano
½ teaspoon chopped marjoram
½ teaspoon chopped thyme
½ teaspoon chopped sage
1 ounce reduced-fat feta cheese
2 pieces WASA Light Rye Crispbread

Directions

Place tomatoes on a flat plate and microwave on high for 2 minutes. Remove from microwave, sprinkle with salt and pepper and toss.
Sprinkle tomatoes with herbs and feta. Return to microwave for 1 additional minute.
Spread onto crispbreads.

Prep time: 10 minutes
